Heritage breeds are traditional breeds that have been revived in recent years, much like heirloom seeds, Heritage breeds of pork have different fat-to-lean ratios and more inherent flavor than industrial-raised commodity pork, which has been bred to be leaner over the years and is less juicy and flavorful as a result. Heritage breeds tend to be pasture raised and allowed to roam and engage in natural porcine behaviors, which also helps develop more flavor. Heritage pork breeds include Berkshire, Duroc, and Spanish Pata Negra (Black Foot) Iberico pork.

In Spain, Iberico pork is often served on the rare to medium side. The USDA recommends that all pork be cooked to an internal temperature of 145°F for safety, with a three-minute rest before serving.

There are three grades of Iberico pork:

  • Cebo: barn raised & grain fed; at least 50% Iberico genetics.
  • Cebo de Campo: pasture raised, free range on Spanish dehesas; 75-100% Iberico genetics.
  • Bellota: pasture-raised, free range, acorn finished; 100% Iberico genetics.
