Heritage breeds are traditional breeds that have been revived in recent years, much like heirloom seeds, Heritage breeds of pork have different fat-to-lean ratios and more inherent flavor than industrial-raised commodity pork, which has been bred to be leaner over the years and is less juicy and flavorful as a result. Heritage breeds tend to be pasture raised and allowed to roam and engage in natural porcine behaviors, which also helps develop more flavor.
