Oro Nero Balsamic Vinegar of Modena offers a lighter flavor with a little more acidic bite than most balsamics of this quality. This makes it an approachable choice for beginners looking to educate their palate on the wonders of aged balsamics for the first time.

Unlike many balsamics on the market, the velvety thickness of this vinegar is not due to the grape must being over-reduced during the cooking process. Instead the traditional slow aging process in breathable casks allows the vinegar to gently evaporate over the years as its complex flavor develops. If you’ve never tried a slow aged balsamic vinegar, you’ll be amazed by its complexity of flavor – musky, sweet & rich with a zing.

This balsamic vinegar was traditionally made using a process that involves cooking the 100% Modena grape must under the open sky, aging with “mothers” from previous batches (preserved heritage balsamic vinegar cultures) in a series of casks over an average of 6-8 years. It has an acidity level of 6%.
