Blood oranges are a delightful exotic orange variety originally from Italy. They have orange-red zest, thicker pith than most other varieties, reddish inner fruit that can range in color from pale pink to black-crimson, and a complex flavor that many citrus fans (particularly Italians) can’t get enough of.

The actual pigments that give blood oranges their red hue are anthocyanins, which are antioxidants.

In addition to using them as you would other orange varieties in salads, sauces, and desserts, blood oranges’ striking color and more complex flavor makes them a particularly good choice for cutting citrus supremes, citrus aioli recipes, gastrique recipes and dishes where color contrast is important. Blood orange juice makes particularly good cocktails, coolers, and sorbets.

When making desserts, try pairing blood oranges’ unique flavor with white chocolate, cream, honey, and spices like cloves, cinnamon and vanilla beans.

Blood orange zest can be used as an ingredient or cocktail/dessert garnish, either raw or candied (how to candy citrus zest).
