Flanken short ribs are thinly cut across the bones. These flanken short ribs are sliced across four ribs, so each one contains four pieces of bone. The flanken style of short rib is best cooked quickly over high heat. It is often used for Korean-style kalbi barbecue.

These 4-rib flanken short ribs are best cooked quickly over high heat. They are ideal for Korean-style kalbi barbecue. The robustly flavored rib meat takes marinades well.

Recommended Cooking Temps:
Rare - 120°-125°
Medium Rare - 130°-135°
Medium - 140°-145°
Medium Well - 150°-155°
Well Done - 160° and above
