Squid can be cooked quickly or slowly depending on the dish you are making.
For tender squid that isn’t rubbery, cook it quickly by deep frying until golden, grilling for a few minutes until just charred, or blanching for a minute to add to a salad.
Slower, longer cooking results in a more tender texture. You can stuff whole squid braise them in the oven. You can simmer squid slowly in a stew or pasta sauce. You can also add sliced squid to soups during the last few minutes of cooking.
