Sauternes a rich, sweet wine from Bordeaux, is a classic pairing for foie gras. Thus, its presence in this silky textured goose and duck liver mousse makes perfectly delicious sense.

Artisans at Fabrique Delices have been producing fine charcuterie for more than 24 years. They follow traditional recipes to ensure authentic texture and flavor. The ducks and geese are fed a natural diet free of antibiotics and hormones, with no animal by-products.

Ingredients: Goose liver, duck liver, duck fat, chicken fat, milk, fresh egg, Sauternes, cornstarch, salt, sugar, hydrolysed corn, soy and wheat proteins, pepper, spices. Aspic: water, gelatin, vinegar, Cognac, salt, hydrolysed corn, soy and wheat proteins.

Storage:

Store mousse in your refrigerator. For long term storage it can be frozen, though this may effect its texture.

Shelf Life:

Unopened packs will stay fresh for up to 8 weeks. Once opened they will last for 10-14 days. This mousse can be frozen for up to 36 weeks.

Mousses’ smooth, spreadable texture is ideal for serving cold or at room temperature with crackers or toast as a classic, easy, and delicious hors d’oeuvre. However, they could also be used as a (rich) condiment or spread for sandwiches.

Traditional accompaniments that accentuate the flavors of savory mousses include cornichons or gherkins, olives, and coarsely ground French mustards.
