Gold Pea Shoots

Gold pea shoots have a flavor evoking green peas (with perhaps a hint of fava beans), with a golden color and overall appearance somewhat similar to popcorn shoots and Gold Haricot Shoots™ (though with smaller leaves).
Despite being green pea shoots, they are gold in color due to having been grown in the dark, which prevents photosynthesis. Gold pea shoots can be used as a garnish, salad ingredient or tender, flavorful bed of greens.
Store golden pea shoots in your refrigerator in their plastic clamshell. Note: Extended periods of light exposure can change these shoots’ color from gold to green.

RECIPES & TIPS
Use golden pea shoots stacked, piled, or otherwise arranged as a garnish. Besides putting them on top of food, you can arrange them below food as a flavorful bed for meat, poultry, or seafood. The pea flavor and tender leaves will help lighten the effect of heavier proteins.
You can also add them to salads by either piling them on top or tossing them with the other greens.
