Veal Marrow Bones Details

Veal marrow bones are used to create rich, thick veal stocks, soup bases, and sauces like veal demi-glace.

These marrow bones are sold as a blend of mostly knuckle bones with some pipe bones. They are not cut for serving roasted as an appetizer. If you wish to serve roasted bone marrow, buy canoe-cut beef marrow bones instead.

Storage:

I WILL DEFINITELY BE ORDERING THESE AGAIN!

These veal marrow bones were perfect for a large batch of stock and, then, making a rich demi glace. They arrived on time, as promised, and were marrow-rich, ladened with connective tissue and very clean. Several were so large that I was, at first, wishing I had a butcher’s band saw, here in my home kitchen. Not to worry! They broke down nicely in the cooking process and I simply dug out the deep marrow from the longer bones, part way into the simmering process. I will definitely be ordering these again from Marx Foods. Thank you!
