Wild striped bass (aka rockfish, stripers, pimpfish) are large fish with grey, soft flesh and a large meaty flake. They offer a full, rich flavor.

This fish has been sustainably caught using primarily hook and line rigs or gill-nets, its Atlantic fishery is tightly managed to prevent overfishing. They are sold fresh, headed and gutted.

Striped bass is an extremely versatile fish that can be baked, broiled, fried, grilled, poached, pain-roasted, sautéed, steamed or braised. Pair it with flavors like fresh thyme, apples, butter, garlic, onions, potatoes, scallions, artichokes, tomatoes and vinegar.
