Wild striped bass (aka rockfish, stripers, pimpfish) are large fish with grey, soft flesh and a large meaty flake. They offer a full, rich flavor.
This fish has been sustainably caught using primarily hook and line rigs or gill-nets, its Atlantic fishery is tightly managed to prevent overfishing. They are sold fresh, headed and gutted.
Store striped bass in the coldest part of your refrigerator. They can be frozen for long term storage.
