Wahoo (Ono) Fillets
Abundant mid-May Through October.
Wahoo (aka Ono) is a very large, long, lean fish with a firm texture similar to tuna or mackerel. Their meat is pink when raw, opaque and white when cooked with a large flake. They have a mild, adaptable flavor and are often paired with tropical ingredients.
These fillets have been expertly hand cut from fish weighing between 20 & 30 pounds.
Store wahoo fillets in your freezer until you're ready to use them, then thaw.
Wahoo is quite perishable & should be used soon after thawing.
