Thawing Tips

Cheeks are an ideal cut for braising. Slow cooking dissolves the fat, collagen, and connective tissues, leaving behind meltingly tender meat that will boost the flavor of any stew or casserole. Sear the meat before braising. Apple cider, white wine and chicken stock, or red wine and tomatoes would make a good braising liquids.
