Love artichokes but looking for an easier to prepare version? Baby artichokes are the answer. Small, cute, and tender, these artichokes are the same variety as full-sized artichokes, but harvested from further down on the plant. They do not include the inedible inner “choke”, so if you trim off the tough stem and outer leaves they’re completely edible.
Baby artichokes are available in two colors (when in season) - green and purple. We estimate there are roughly 100 to 140 baby artichokes in a 20lb case.
Store baby artichokes in a plastic bag in your refrigerator.

RECIPES & TIPS
Trim off the stem, top half inch, and tough outer leaves (keep peeling off leaves until you see the lighter-colored inner leaves), then steam, sauté or boil. They can be blanched in hot oil, then deep fried, and you can also grill them after par-cooking by steaming or boiling…they’re just the right size for kabobs!
