Lamb hindshanks, a bone-in cut from the rear leg, are slightly larger and meatier than foreshanks. Hindshanks offer big flavor but, like all hard-working muscles, must be slow cooked to tenderness.

Store frozen lamb hindshanks in your freezer until you're ready to use them, then thaw only as much as you plan on cooking.

Thawing Tips

Lamb hindshanks may be braised, slow roasted, or cooked sous vide. They need lots of time. They are done when the meat is tender enough to fall from the bone. A wide array of herbs, spices and aromatics flatter the flavor of lamb. Start with rosemary, thyme, mint, garlic and lemon, or experiment with stronger spices like cumin, cinnamon and curry powder. Lamb shanks are often served with lentils, or on a bed of polenta, mashed potatoes or puréed squash.
