Lamb chump is a little-known cut from the lower back above the leg. Each 6 oz. chump steak is trimmed of fat and silver skin and ready to cook. Grass-fed lamb is lower in saturated fat and higher in healthy vitamins, omega-3 fatty acids, and conjugated linoleic acid (CLA) than grain-fed lamb.
Store Ovation lamb chumps in your freezer until you’re ready to use them, then thaw as many packs as you need.
RECIPES & TIPS
Lamb chump does well on the grill but is best when pan-seared and oven finished to medium or medium rare. The meat is mild enough to pair with spring vegetables, ratatouille or lemongrass broth, but also stands up to bolder flavors like garlic, rosemary and thyme.
Recommended Cooking Temps:
Rare - 120°F
Medium Rare - 130°F
Medium - 140°F
Medium Well - 150°F
Well Done - 160°F and above
The UDS recommends a safe eating temperature of 145°F.
