Lamb chump is a little-known cut from the lower back above the leg. Each 6 oz. chump steak is trimmed of fat and silver skin and ready to cook.

Thawing Tips

Lamb chump does well on the grill but is best when pan-seared and oven finished to medium or medium rare. The meat is mild enough to pair with spring vegetables, ratatouille or lemongrass broth, but also stands up to bolder flavors like garlic, rosemary and thyme.

Medium Rare - 130°F 
Medium - 140°F 
Medium Well - 150°F 
Well Done - 160°F and above
