Store frozen boneless lamb legs in your freezer until you're ready to use them, then thaw only as much as you plan on cooking.

Thawing Tips

Stuff, roll and roast boneless lamb legs. For a quicker cooking method, unroll the meat and cook it flattened on hot grill. Boneless legs may also be cut into strips or cubes for stews, stir fries or other applications.

Garlic, fresh or preserved lemon, thyme, oregano, mint, and rosemary all marry well with lamb, as do pungent spices like cumin and curry.

Medium Rare - 130°
Medium - 140°
Medium Well - 150°
Well Done - 160° and above
