Oyster steaks get their name because of their oyster-like shape. An uncommon and inexpensive cut, oyster steaks are thin, like skirt steak, and cook quickly. Cut from a muscle just above the hip, they have a firm chew similar to flank steak, but thanks to plenty of marbling, their flavor is closer to ribeye.

Store frozen steaks in your freezer until you're ready to use them, then thaw only as much as you plan on cooking.

Thawing Tips

Oyster steaks can be quickly pan-seared whole and served alongside your favorite potato side (steak frites anyone?) or thinly slice the seared meat and use as a sandwich filling. Oyster steaks are also terrific in a stir fry. Whether you pan sear or stir fry it, marinating the meat for a few hours before cooking improves tenderness.
