Roasting pigs are smaller whole pigs that are ideal for slow roasting on a spit, in a pit, or in an oven. They can also be cut down into various cuts like chops, shoulders, ribs & more. They’re larger & older than suckling pigs, and have a texture & flavor in line with normal pork rather than suckling pigs’ unique, more gelatinous texture & milder flavor.

These pigs are sold gutted with their hair removed, but with the head, skin, and hooves on. They ship frozen, but fresh is available via special order.

Shipping Limitations:

Only ships Wednesdays for Thursday delivery.
Order must be in by 9AM PST preceding Tuesday at latest.

Store frozen roasting pigs in your freezer, then thaw before cooking. Store fresh roasting pigs in the refrigerator.

Thawing Tips

These whole pigs are delicious roasted until their meat is cooked through and the skin is crisped, but can also be cut down into their various cuts.

Pair pork with flavors like rosemary, apples, cider (alcoholic or non-alcoholic), balsamic vinegar, herbs (rosemary, sage, cilantro, and/or bay leaves), ginger, fennel, cumin, mustard, molasses, garlic, white wine, and/or lemon.

Recommended Cooking Temps:
The USDA recommends that pork be cooked to an internal temperature of 145 degrees, with at least a 3 minute rest before serving.
