Petite lemongrass has a lemony flavor that is somewhat similar to mature lemongrass without as much of a potential bitter note. It is considerably more tender and less woody than mature lemongrass. Rather than having multiple layers of grass tightly bunched together it is sold as individual green blades.
Petite lemongrass can be used similarly to mature lemongrass in soups, stews, sauces and marinades.
Store petite lemon grass in your refrigerator in its plastic clamshell.

Petite lemongrass is often steeped or blended for use in dishes. While far more tender than mature lemongrass, it’s generally still too woody to eat whole.
