Grain-Fed Angus Beef Chuck Rib

$269
6 chuck ribs (approximately 20 lbs.)

The chuck rib is a large subprimal from the shoulder, an area known for rich, beefy flavor. Chuck rib is best suited for methods that involve slow, moist cooking to maximize tenderness but may also be sliced for quick-cooking Asian-style barbecue like Yakiniku.

Thawing Tips

Braising is the most common method of cooking chuck ribs. Sear the meat first at a high temperature and then slow cook it in a liquid (like broth or wine) at a low temperature for several hours. This method helps to break down the tough connective tissue, resulting in tender, flavorful meat. Chuck ribs also can be cooked in a slow cooker or crockpot with vegetables, broth, and seasonings. Smoking chuck ribs can yield wonderful results. The low and slow cooking process helps to tenderize the meat.
