Galician-style beef short ribs from The Vintage Beef Company are produced from mature beef allow to age on pasture more than twice as long as ordinary beef cattle, inspired by the Galician breed Rubia Gallega and Spain’s reverence for vaca vieja.

Marbling produces juicier, more tender meat. These beef ribs earned an MB score of 3+ on the AUS-MEAT marbling scale, which indicates moderate marbling, promising a good balance of flavor and tenderness for premium eating quality.
