Oven-prepared beef ribs from mature, 100% grass-fed beef.

Produced in Australia, these Galician-style beef ribs are inspired by Spain’s reverence for vaca vieja and the Basque region specialty txuleton, typically made from the Galician breed Rubia Gallega. They are harvested from retired breeding cattle allowed to mature for at least 5 years, more than twice the usual age for beef. The extended time on pasture develops deep, multi-faceted flavor and intramuscular fat (aka marbling).

Marbling produces juicier, more tender meat. These beef ribs earned an MB score of 3+ on the AUS-MEAT marbling scale, which indicates moderate marbling, promising a good balance of flavor and tenderness for premium eating quality.
