Duck Breast Trim
Duck trim is an ideal meat cut for making duck sausages or your own ground duck meat for sauces. This trim is harvested from Pekin duck breasts.
Duck meat’s flavor is rich and full bodied, pairing well with both sweet and savory ingredients. It also smokes very well, making duck trim a good choice for sausages you plan on smoking.
RECIPES & TIPS
Grind this trim thawed but cold using a meat grinder or attachment on your mixer. Mix with complimentary flavors of your choice and either use as sausage patties or pack the sausage into sausage casings to make links.
Duck meat pairs well with flavors like fruit, honey, ginger, sage, juniper berries, curry powder, nutmeg and red wine. For spicy sausages, consider adding ground dried peppers.
