Thawing Tips

These supremely tender veal top round cutlets cook very quickly, especially if you pound them thinner with a meat mallet for dishes like veal piccata or scallopini. Sauté them in equal amounts of butter and olive oil, or coat them first in breadcrumbs, egg, or seasoned flour. Cook flattened cutlets for about a minute per side.
