The tenderloin is a long, lean, boneless cut taken from either side of the cow's vertebrae. The muscle is little used, making this cut is exceptionally tender. Tenderloins may be roasted whole or cut into individual steaks (filet mignon).

Store frozen tenderloins in your freezer until you're ready to use them, then thaw only as much as you plan on cooking.

Thawing Tips

A whole tenderloin makes an impressive main dish for a celebratory meal. Tenderloins are often cut into medallions or thick steaks (filet mignon). Or thinly slice raw tenderloin and serve it with lemon & capers as carpaccio. Because tenderloin is a leaner cut, the meat is often paired with a rich sauce, such as bearnaise, but salt and pepper, or a simple pan jus is all the enhancement robustly flavored Ocean Beef really needs. Be sure to rest the meat after cooking.

Rare - 120°-125°
Medium Rare - 130°-135°
Medium - 140°-145°
Medium Well - 150°-155°
Well Done - 160° and above
