Thawing Tips

The simplest way to serve marrow bones is to season them with salt and pepper, broil until the marrow begins to soften but not melt and serve them with crostini or toast points for spreading. For an extra layer of flavor, spoon on a topping of breadcrumbs seasoned with olive oil, fresh parsley, garlic, salt, and chili flakes before popping under the broiler. Serve broiled marrow bones alongside a steak or slice of prime rib, or on their own with crostini or toast points and some condiments such as shallot marmalade, fried capers, or whole grain mustard aioli.
