Whether they are fresh, dried, wild, or cultivated; mushrooms are a gem of nature. Their versatility gives mushrooms a great deal of value in the culinary arts. There are two primary fresh wild mushroom seasons in the Pacific Northwest: Spring and Fall. Morels and Porcinis grow prolifically in the Spring. In the summertime, most varieties grow sporadically in varying quality. In the fall, Chanterelles and Lobsters pop up first and grow bountifully into the winter, followed by hedgehogs and black trumpets.
