| Porcini mushrooms (aka Cèpes, King Bolete or Bolete mushrooms) are
perhaps the most beloved wild mushroom in Italy. Their rich, heady
flavor and meaty texture are amazingly versatile, delicate enough to
give grace to an elegant stew or sauce, and yet vigorous enough to
stand up to something as flavorful as a thick grilled steak.
Because dried Italian porcinis, while delicious, are only available
sliced and will reconstitute a little bit tougher, frozen Italian
porcinis are as close as you can get to the shape and texture of fresh
Italian porcinis outside of the annual season. |

Frozen porcinis are particularly well suited to roasting, but can also be sauteed or stewed. They add a deep, earthy note to sauces, stuffings, and stews.
