Heritage Chickens

Heritage chickens are the poultry equivalent of heirloom tomatoes. While industry has long been trying to develop faster growing chickens to increase yield and lower prices, these old breeds have survived for one simple reason: they produce intensely flavorful chicken.  Try one of the French heritage chicken breeds like poulet rouge or blue poulet (aka blue foot chicken) and you will be amazed by their flavor.  Black silkie chickens are delicious in stews and soups.
