Millet was first domesticated in China over 7,000 years ago. Recently this ancient cereal has become more popular in the US because it's very nutritious and lacks gluten. It possesses a sweet, mild corn-like flavor, absorbs other flavors well, and is frequently used as a replacement for rice.
As an additional benefit, millet requires less water to grow than any other cereal, making it an environmentally efficient crop.

Shelf Life: Up to a year.
Toast millet seeds prior to cooking to intensify their flavor. Simmer one cup of millet seeds in three cups of water for 40 minutes. Millet triples in size as it cooks.
It can also be cooked longer with more water to make a creamy polenta-like dish.
Pair millet with dairy (especially butter and cheese), eggs, ginger or chilies.
