Relatively mild when compared to many other dried chili peppers, Anchos (from the Spanish for “wide”) are prized for their fruity flavor. Most dried poblano chilies are anchos. However, there is another variation, called the mulato chile which is darker, sweeter, and softer.
We also offer pre-ground ancho chili powder in bulk.
Storage: Store ancho chili peppers in an air-tight container in a cool, dark cupboard.
Shelf Life: Anchos will retain their flavor for at least a year, but likely much longer.
Ancho chilies are most often ground into chili powder for culinary use rather than being rehydrated. No traditional mole sauce is complete without ancho chilies, but they can also be used in salsas, sauces, soups, and even desserts.
