First cultivated by the Anasazi Native Americans, these beans can be used in any recipe that calls for pinto beans.
Dried anasazi beans are best stored in an air-tight container in a cool, dry place.
Basic Cooking Technique:
Soak dry Anasazi beans overnight prior to use. Boil in fresh water for three minutes prior to simmering (covered) until tender. When cooked, one cup of dry Anasazi beans becomes 2 1/4th cups of cooked beans.
