Black summer truffles (Tuber Aestivum Vitt) are the most mild variety of European black truffles. These summer truffles have been pre-sliced before being jarred for year-round use.
Though they’re certainly more affordable than fresh truffles, most chefs feel that preserved black truffle slices don’t impart much flavor. They’re usually used to add the appearance of truffles to a dish in combination with intensely flavored truffle oil or truffle salt to give the food truffle flavor and aroma.
If you're looking for an out of season truffle option that provides good flavor, a far better alternative would be frozen European truffles.
Storage: Store preserved black truffle slices in a cupboard until you open them, then keep them in an air-tight container in the refrigerator.
Shelf Life: Once opened, preserved truffles will keep in the refrigerator for up to two weeks.
