Epazote (aka Hedge Mustard, Jerusalem Parsley) is a Mexican herb also used widely in South and Central America with a strong resinous-citrus flavor.  In these cuisines it is commonly consumed as a leafy vegetable or used as an herb, particularly when cooking beans (traditionally black turtle beans) as it believed to have the ability to reduce or prevent bean-induced flatulence.

This bulk epazote is fine-dining restaurant quality, so it is fresher and higher quality than the fresh herbs found in most grocery stores.

STORAGE

Storage:

Fresh epazote should be stored in a plastic bag in your refrigerator crisper drawer.



For long term storage of epazote, we recommend drying it in a 200 degree oven over several hours & storing it in an air tight container in a cool, dry place. Drying will increase its potency such that 1 tsp of dried epazote is equivalent to seven fresh leaves.

Shelf Life:

Up to 1 week fresh, six months dried.

RECIPES & TIPS

Apart being added to the pot when simmering beans, epazote can also be used as an herb in quesadillas, tamales, enchiladas, soups, moles and sopes.

Flavors commonly paired with epazote include cilantro, huitlacoche, chilies, game meats, bell peppers, chorizo, corn, seafood, cumin, beef, garlic and wild mushrooms.
