Epazote (aka Hedge Mustard, Jerusalem Parsley) is a Mexican herb also used widely in South and Central America with a strong resinous-citrus flavor. In these cuisines it is commonly consumed as a leafy vegetable or used as an herb, particularly when cooking beans (traditionally black turtle beans) as it believed to have the ability to reduce or prevent bean-induced flatulence.
This bulk epazote is fine-dining restaurant quality, so it is fresher and higher quality than the fresh herbs found in most grocery stores.
Storage: Fresh epazote should be stored in a plastic bag in your refrigerator crisper drawer.
For long term storage of epazote, we recommend drying it in a 200 degree oven over several hours & storing it in an air tight container in a cool, dry place. Drying will increase its potency such that 1 tsp of dried epazote is equivalent to seven fresh leaves.
Shelf Life: Up to 1 week fresh, six months dried.
Apart being added to the pot when simmering beans, epazote can also be used as an herb in quesadillas, tamales, enchiladas, soups, moles and sopes.
