Shelf Life: Up to 36 weeks frozen, 7-10 days thawed.

Chorizo can be grilled or fried as links or sliced, but is most often removed from its casing and crumbled for use as an ingredient.
 
Raw chorizo sausage is used in both Mexican and Spanish dishes, but can also be added to any dish where you want to bring succulent pork flavor and robust spices, like our chorizo mashed potatoes recipe.
 
Try browning sliced or crumbled chorizo first thing when cooking. This renders flavorful spiced fat into the pan that can be used as the cooking fat for the rest of your recipe. If leaving the sausage in the pan for the rest of the cooking time will overcook it, simply remove it from the pan and return it near the end to finish cooking.
