Elk (or Wapiti) meat is very low in fat and cholesterol. Its flavor is mild and beef-like, but very close to venison.
Applications: Like all game meats, be careful not to over cook elk meat. It will become dry and lose its flavor if cooked to a 'well-done' stage.
Recommended Cooking Temps:
Rare - 135° Medium Rare - 140°-150° Medium - 140°-145° Medium Well - 160° Well Done - 165° and above
