Miner’s lettuce (aka Indian lettuce, winter purslane) is a tender wild salad green high in Vitamin C and offering a mild, spinach-like flavor. It was once an important part of some Native American diets as well as food for early American settlers and is delicious raw or cooked. This miner’s lettuce has been sustainably hand-foraged in the Pacific Northwest. Origin: The Pacific Northwest Season: Typically March to June. Applications: In salads fresh miner’s lettuce can be tossed with cranberries, blue or feta cheese, beets, citrus zest/juice, vinaigrettes or nuts (we recommend pine nuts or sugared walnuts). For an example, check out this miner’s lettuce salad recipe. It can also be added to sandwiches or cooked as you would spinach – sautéed, steamed, or creamed with freshly grated nutmeg. How to Store and Share: We recommend consuming fresh miner’s lettuce as soon as possible after it arrives. For short term storage, wrap it in a plastic bag (optionally with holes punched in it).
