Miner’s lettuce (aka Indian lettuce, winter purslane) is a tender wild salad green with a mild, spinach-like flavor. High in vitamin C, and delicious raw or cooked, it was once an important part of some Native American diets as well as food for early American settlers.

Storage: Place miner's lettuce in a plastic bag (optionally with holes punched in it) and keep it in your refrigerator's crisper drawer.

Shelf Life: 3-7 days.

In salads, fresh miner’s lettuce can be tossed with cranberries, blue or feta cheese, beets, citrus zest/juice, vinaigrettes or nuts (we recommend pine nuts or sugared walnuts).
 
It can also be added to sandwiches or cooked as you would spinach – sautéed, steamed, or creamed with freshly grated nutmeg.
