Merguez is a spicy lamb sausage that originated in Africa (Morocco, Algeria, Libya, Tunisia and North Africa) and then spread to the Mediterranean and Western Europe. Because the originating countries have large Muslim populations, it is traditionally stuffed into smaller lamb casings rather than the pork casings used in most sausages.

While our large merguez sausages use pork casings, these smaller 2oz sausages are completely pork free. They have been made from lamb fed natural feed (no animal by-products).

Fabrique Delices has been carefully crafting artisanal charcuterie for over 24 years. They follow traditional recipes in order to ensure authentic texture and flavor.

Storage: Store these sausages in your freezer until you're ready to use them, then thaw only as many as you need. Thawed sausages should be stored in the refrigerator.

Shelf Life: Up to 36 weeks frozen, 7-10 days thawed.

This lamb sausage can be grilled or fried whole or sliced, or the casing can be cut, and the sausage removed for crumbling into a wide assortment of dishes. Merguez sausage is particularly suited to pairing with northern African flavors, but also makes a great sausage bolognese (Merguez Bolognese Recipe).
