Store sausages in your freezer until you're ready to cool them, then thaw as many packages as you need.

RECIPES & TIPS

Specialty sausage is easy to roast, sauté, or grill. However, it is not only suited to whole-sausage applications. The raw sausages' casings can be cut, and the sausage meat crumbled into sauces or used as a stuffing or filling as you would use conventional bulk sausage.

The cooked sausages (smoked duck & lamb with garlic & oregano) merely need to be thawed & reheated (as you would hot dogs or other cooked sausages) before being served.  They can also be sliced for use as an ingredient.
