Micro-Amaranth is perhaps the most strikingly colored of all the microgreens. Despite its powerful appearance, red amaranth’s flavor is fairly mild, allowing it to be used to add a dash of intense red-purple color to any dish without compromising the underlying flavors.
Applications: Because these amaranth microgreens are red, they can be used to garnish salads without blending in with the larger greens. Try using them with other microgreen varieties to bring color to a microgreen salad!
How to Store and Share: Amaranth microgreens should be kept in their plastic clamshell in the fridge until you are ready to use them. They will last for about 5-7 days.
