Tarbais beans (aka haricot tarbais) are a traditional white cassoulet bean in France with a thin skin and subtle flavor. In France they’re typically grown together with corn, so the beans can loop around the corn stalks for support.


Store dried tarbais beans in an air-tight container in a cool, dry place.


Tarbais beans should be soaked before cooking (typically overnight), rinsed, put in fresh water with a pinch of salt, and simmered until tender.

One cup of dried tarbais beans should yield approximately 2 ½ cups of cooked beans.
