Petite veal shanks are similar in size to lamb shanks, but have the milder flavor (and lower price) of veal. Shanks are an affordable slow cooking cut typically seared then braised, or slow-roasted.
Each petite veal hindshank measures approximately 5” long, and is cut flat at a 90° angle at the bottom, so it will stand up on a plate. They are sold with the hock off.
Store petite veal shanks in your freezer until you’re ready to use them, then thaw before cooking.
