Dried Paddy Straw Mushrooms

Paddy straw mushrooms (volvariella volvacea - aka straw mushrooms, grass mushrooms) are a small South Asian variety traditionally cultivated on straw from the rice fields. They are a traditional ingredient in many dishes from that region, including those from southern China.
They are conveniently bite sized with an earthy, smoky flavor. Each ounce of dried paddy straw mushrooms will reconstitute into approximately 3-4 ounces.
Store dried paddy straw mushrooms in an air-tight container or zip top bag in a cool, dry, dark cupboard.
Dried mushrooms will retain their flavor for at least a year, but likely far longer.
RECIPES & TIPS
Dried paddy straw mushrooms are usually rehydrated – either by soaking them in boiling water for 15-20 minutes until tender (How to Reconstitute Dried Mushrooms) or adding them to simmered, stewed or braised dishes so they can rehydrate during the cooking process.
Try them in stir fry dishes (chow mein, chop suey, etc), soups or sauces.
