Pacific Snapper (also known as Rockfish) has firm flakes and a mild flavor. It can be cooked using a wide variety of methods, from searing, frying and grilling to poaching.

These fillets tend to range in size from about four to six ounces each.


Store rockfish fillets in the coldest part of your refrigerator.


Rock fish pairs well with tropical fruit flavors like lime, mango, coconut, guava, passion fruit and kiwi as well as soy sauce, white wine, browned butter and chile peppers.
