Calabrian chilies are small, dark red, medium-spicy chilies from the southern Italian region of Calabria. In the US calabrian chilies are typically sold in brine or as a chile paste, ground Calabrian chilies are rare.
These chilies have been ground into small granules (approx. 1-3 mm) rather than a fine powder, then mixed with salt. Whole dried Calabrian chilies are also available.
Store granulated Calabrian chiles in an airtight container in a cool, dry place.
RECIPES & TIPS
Use granulated Calabrian chilies as you would other ground medium-spicy chilies as an ingredient, seasoning or finishing touch for everything from pasta and pizza to salads and vegetable sides.
Because the granules have already been mixed with salt, taste your dish for seasoning after adding them, not before (so you don’t over salt).
