Mums are medium blossoms with thin petals and prominent centers that can be colored differently (typically yellow) from the rest of the blossom. While they’re very pretty, and safe to eat, mums have a tough texture and a bitter flavor. This makes them better suited to being used as a food safe garnish rather than an ingredient.
Edible mums are sold as a mixed color blend that varies with availability and can include some or all of the following: purple, white, yellowish green, and burgundy.
Store edible mum flowers in their plastic clamshell in your refrigerator.
