Mousseron mushrooms (aka fairy ring mushrooms) are a small, delicate variety. Though still relatively unknown as a culinary mushroom in the US, they’re highly prized in Europe. When rehydrated they are soft & chewy with a porcini-esque flavor.
Each ounce of dried mousseron mushrooms reconstitutes into about 3-4oz.
Store dried mousseron mushrooms in an air-tight container in a cool, dry place.
RECIPES & TIPS
Dried mousseron mushrooms can be rehydrated by soaking them in boiling water for about 15-20 minutes until tender (How to Reconstitute Dried Mushrooms). They can also be added to soups or braises to rehydrate during the cooking process (simmer or braise for at least 25 minutes to soften).
Mousserons work well in sautés, stuffing, soups and stews. Try adding rehydrated mousserons sautéed with onions and garlic to pasta, rice or bean dishes. They can also be used to top roasted meats or poultry.
