Gigande beans (aka giant white beans, gigantes, yigante beans, hija beans) are very large members of the white runner bean family that when cooked can swell big enough to fill a tablespoon with a single bean.

In addition to their impressive size, these beans have a tender yet meaty texture and a subtly sweet, creamy flavor. They absorb flavors well and hold their shape well, making them a particularly good choice for bean salads and hearty soups.


Store dried gigande beans in an air-tight container in a cool, dry place.


Soak gigande beans overnight in cold water, then drain off the water and cook (with fresh water) as you would other bean varieties until tender.
