Cascabel chilies (aka rattle chilies, little bell chilies) are medium chilies that are round and have several loose seeds that rattle loudly when the chilies are shaken.
Store cascabel peppers in an air-tight container in a cool, dark cupboard.
Cascabel peppers will retain their flavor for at least a year, but likely much longer.
RECIPES & TIPS
Cascabel chilies can be ground into chili powder or reconstituted in boiling water. Their flavor works well in soups and other dishes, but their skin is leathery and so they should be pureed or steeped and then removed prior to the dish being served.
