Corona (Runner) Beans
Choose 10 or 60 lbs
Corona beans (aka sweet white runner beans) are a half-inch long, off-white heirloom bean that cooks similarly to pinto or pink beans. Tender, yet meaty, they’re particularly prized in Italy, were they’re found in such classic dishes as pasta e fagioli.
Store dried corona beans in an air-tight container in a cool, dry place.
RECIPES & TIPS
Corona beans are a great addition to chilies, soups and stews, but can also be served as part of a side dish or salad. Try pairing them with pasta and/or hearty greens like kale, spinach, or nettles.
Basic Cooking Technique:
Prior to cooking, dry Christmas lima beans should be soaked in water for three to eight hours (ideally overnight) and then rinsed.
To cook on the stove top, cover the soaked & rinsed beans with about an inch of water. Bring the water to a boil, then immediately reduce the heat to a simmer. Cover the pot and let cook until the beans are tender. Each cup of raw Christmas lima beans will yield about 2 ¼ cups of cooked beans.

Have been wanting to try white corona beans for sometime, finally ordered and received. Made a hearty bean and bacon soup today and was amazed at how tender and creamy these beans are, and quite a novelty. Would highly recommend !
