Chinese long beans (aka yardlong beans, snake beans, yard beans, asparagus beans or dow gok) are as thin as a pencil and can grow up to 18 inches in length. Their flavor is fairly similar to that of the conventional American green bean, but their texture is chewier. Most commonly associated with the cuisines of SE Asia (particularly Thailand) and south China, they’re also eaten in Africa.
Long beans provide vitamins A, E and C as well as iron.
